Cucumber and Pork Wrap 黄瓜猪肉卷

4人份 Ingredients 用料 300g Pork (Lean) 瘦猪肉 4 tablespoons Light Soya Sauce 酱清 1 tablespoon Sesame Oil 麻油 1/2 tablespoon Sugar 白糖  4 slices Cheese 乳酪  1 tablespoons Oil 油 4 slices Ready-made Wraps  A dash Pepper 胡椒粉 1 Cucumber 黄瓜 Method 做法 1. Cut pork into long strips. Marinade with light soya sauce, sesame oil, sugar and pepper overnight. 2. In a heated wok, heat up the oil. Fry the pork stripes until almost cooked. 3. Spread cooked pork onto the wrap. Add a slice of cheese. 4. Toast the wrap for 3 minute. 5. Wash and cut cucumber into long stripes. Add into wrap. Serve

Egg Tart 蛋挞

4 pieces Ingredients 用料 2 pieces Frozen Uncooked Prata Dough印度煎饼皮  50ml Milk 鲜奶 1  Egg 鸡蛋 1 tablespoon Sugar 白糖 Method 做法 1. Unfrozen the uncooked prata dough till soft enough to make shape. 2. Glaze the muffin tray with oil. Place the prata dough to line the muffin tray as base pastry. 3. In a bowl, mix the milk, egg and sugar well. Pour into pastry tray. 4. Preheat oven at 220 degrees Celsius. Bake the egg tarts for 20 minutes. Serve.

Belgian Waffles

5 pieces Ingredients 用料 1 cup Plain Flour 面粉 1 cup Milk 鲜奶 1 Large Egg 鸡蛋 1-1/2 tablespoons Sugar 糖 1 teaspoon Baking Powder 发粉 1/2 teaspoon Cinnamon Powder 桂皮粉 1/4 teaspoon Salt 盐 1 teaspoon Vanilla Essence 香草香精 1/4 cup Cooking Oil 油 Method 做法 1. Separate egg yolk and egg white into 2 mixing bowl. 2. Beat the egg white until semi-fluffy. Add sugar. Continue to beat until the egg white are foamy. 3. In the egg yolk bowl. add milk, oil, vanilla essence, salt, and mix well. Sift plain flour, baking powder and cinnamon powder into the bowl. Mix well until no lumps. Add mixture into beaten egg white mixing bowl. Stir in a single direction till the mixture are well blended. 4. Heat up the waffle maker. Pour mixture, close the lid. Serve when the waffle turns brown. Note:  You will need a waffle maker.

Bake Macaroni and Cheese

3人份 Ingredients 用料 2 cups Macaroni 通心粉 1/2 cup Milk 鲜奶 1/4 cup Stock (any) 上汤 1 teaspoon Salt 盐 1 tablespoon Oil 油 4 to 5 tablespoons Cheese (any: Grated Cheddar, Parmesan, Mozzarella) 乳酪 1 tablespoon Flour 面粉 1  Onion (chopped) 大葱 8 pieces Crab Stick (Optional) 蟹肉 Method 做法 1. Boil water in pot. Add salt and 1 tablespoon of oil with macaroni (ensure that the water is enough to cover the macaroni). Simmer for 20 minutes or until the macaroni turns soft. Drain and set aside. 2. Mix milk, stock, flour and a pinch of salt well. 3. In a baking tray, place macaroni, onion and crab sticks and cheese. Pour mixture into the baking tray. Sprinkle remaining cheese. 4. Bake at 170 degrees Celsius for 15 to 20 minutes. Serve.

Pancake 松饼

3人份 Ingredients 用料 1-1/2 cup (195g) Plain Flour 面粉 1-1/4 cup (295ml) Milk 鲜奶 1 Large Egg 鸡蛋 2 tablespoons Sugar 糖 1 tablespoon Baking Powder 发粉 3/4 teaspoon Salt 盐 2 tablespoons Melted Butter 牛油 1 teaspoon Vanilla Essence 香草精 Method 做法 1. Mix sugar, egg, salt, oil and milk in a mixing bowl. Add in flour, vanilla essence, melted butter and  baking powder, stir the mixture until smooth (no lumps). 2. Heat some oil in wok. Reduce to medium heat. Put 2 spoonful of pancake mixture into wok. Flip over when the bottom layer hardens. 3. Serve with maple syrup, butter or fruits to your liking.

King Oyster Mushroom in Evaporated Milk Juice 乳汁杏菇

2人份 Ingredients 用料 300g King Oyster Mushrooms 杏菇 1/8 teaspoon Salt 盐 1 teaspoon Potato Starch 生粉 50ml Water 水 80g Broccoli 西兰花 (Cut into florets) 1 tablespoon Evaporated Milk 花奶 3 cloves Garlic 蒜蓉 (Diced) 1/2 teaspoon Salt 盐 1 teaspoon Sugar 糖 1/2 teaspoon Potato Starch (Mix with 1 tablespoon of water) 生粉 Method 做法 1. Cut oyster mushrooms into slices. Stir in 1/8 teaspoon salt and mix evenly. Add 1 teaspoon potato starch and stir well. 2. Boil broccoli in hot water and dish into serving plate. 3. Heat some oil in wok, fry diced garlic till brown. Stir fry oyster mushrooms. Remove and place on broccoli. 4. Bring water, evaporated milk, salt and sugar to boil. Add potato starch mixture and stir well. Pour gravy onto oyster mushrooms.

Pan Fry Lean Pork Fillet 干煎瘦肉

2人份 Ingredients 用料 300g Lean Pork Meat cut into fillet 前腿瘦肉切片 3 tablespoon Light Soya Sauce 酱清 1 tablespoon Dark Soya Sauce 黑酱油 1 tablespoon Sugar 糖 A little Pepper 胡椒粉 1 teaspoon 五香粉 (optional) A little Chilli Powder 辣椒粉 (optional) Method 做法 1. Use the back of the knife to chop the meat. Mix all the ingredients with the meat, stir well. Marinate for 15 minutes. 2. Heat some oil in wok. When the wok is hot, use medium heat to pan fry the meat. Poke a fork into the meat to check if it is well cooked. If the fork can puncture into the meat easily, the meat is cooked. 3. Drain the oil before serving.

Thai Vermicelli Salad with Prawn 泰式凉拌虾冬粉

2人份 Ingredients 用料 10 Medium Size Shrimps 中虾 100g Ground Pork 猪肉碎 50g Oyster Mushroom 耗菇 20g Chinese Celery (cut into 1 inch long) 芹菜 2 Onion 洋葱 1 Tomato 番茄 2 Chilli 辣椒 50g Vermicelli 冬粉 6 tablespoons Fish Sauce 鱼露 1 tablespoon Sugar 白糖 3 Big Green Lime (squash for juice) 酸酐(浇汁) Method 做法 1. Blanch pork, shrimp and mushroom in boiling water. Drain. 2. Blanch vermicelli in hot water until soft. Drain. 3. Mix all ingredients in a big bowl, then season with fish sauce, sugar, lime juice. Trasnfer to a serving dish. Serve immediately with fresh vegetables such as cabbage, cucumber or string bean.

Miso Sponge Gourd 味珍丝瓜肉碎

2人份 Ingredients 用料 1 Sponge Gourd 丝瓜 130g Ground Pork 猪肉碎 1 tablespoon Miso Paste 味珍 1 tablespoon Sugar 白糖 3 doves Garlic 蒜蓉 200ml Water 水 Method 做法 1. Heat up oil in wok. Fry garlic till golden brown. 2. Fry pork in wok till almost cooked. Add sponge gourd into wok. Add water. Cover the lid to simmer for approximately 3 minutes. 3. Add miso paste into wok, stir well. Serve on plate.

Korean Dumplings in Vinegar 黑醋韩国饺子

2人份 Ingredients 用料 10 Korean Dumplings (any fillings to your liking) 韩国饺子 3 stalks Chinese Celery (cut into 1 inch long) 芹菜 4 stalks Spring Onion (diced) 葱碎 1 tablespoon Sugar 白糖 4 doves Garlic 蒜蓉 1 Chilli 辣椒 3 tablespoon Black Vinegar 黑醋 1 tablespoon Sesame Oil 麻油 Method 做法 1. Cook dumplings in boiling water for 5 minutes. Drain. 2. Mix all ingredients with dumplings, serve on dish.

Lemongrass Drink 香茅茶

6人份 Ingredients 用料 8 Large Stalks Fresh Lemongrass 香茅 6 tablespoon Rock Sugar 冰糖 8 cups Water 水 Method 做法 1. Cut off the black dusty knob at the bottom of the root of the lemongrass. Wash and peel off any leaves that have turned brown. Cut into half, breadth-wise. Use pestle of the blunt side of a heavy knife and thump the lemongrass. 2.Put the lemongrass stalks in the water and bring to a boil. When the water starts to boil, turn the flame down and simmer for about an hour and a half. The water should take on a light greenish tinge. Add rock sugar and stir till it dissolves. 3.Serve with ice cubes for a refreshing drink. It can also be drunk hot.

Plum Sauce Chicken Wings 酸梅酱鸡翅

2人份 Ingredients 用料 5 pieces Chicken Wings 鸡翅 3 to 4 tablespoon Plum Sauce 酸梅酱 2 tablespoon Light Soy Sauce 酱清 2 tablespoon Sesame Oil 麻油 20g Coriander 芫荽 20g Spring Onion 葱 4 doves Garlic 蒜蓉 200ml Water 水 Method 做法 1. Marinate chicken wings in plum sauce and sesame oil (optional: Add a little pepper) for 15 minutes. 2. Heat up wok with 2 tablespoon of oil. Fry garlic till golden brown. 3. Add chicken wings to fry for 2 minutes. Add water and turn down the heat to simmer for 15 minutes. Stir occasionally. Use a fork to poke the chicken. If the fork can easily pierce through the meat the chicken is cooked. Add spring onions and coriander. Stir and serve.

Hawthorn Roselle Tea 山楂洛神花茶

6人份 Ingredients 用料 20g Roselle 洛神花 40g Hawthorn 山楂 100g Rock Sugar 冰糖 250ml Water 水 Method 做法 1. Rinse Roselle and Hawthorn. Put them in the water and bring to boil. When the water starts to boil, turn the flame down and simmer for about an hour and a half. Add rock sugar and stir till it dissolves. 2.Serve with ice cubes for a refreshing drink. It can also be drunk hot. Helps in digestion.

Celery with Prawn 西芹虾仁

4人份 Ingredients 用料 120g Celery (remove old veins, cut into slices) 西芹 12 Medium Prawns 中虾 1 tablespoon Salt 盐 1 tablespoon Sesame Oil 麻油 2 tablespoon Sugar 白糖 Method 做法 1. Remove shells and veins from prawns, marinate with half tablespoon of salt for 15 minutes. 2. Blanch prawns in hot water. Remove and drain. 3. Blanch celery in hot water. Remove and drain. 4. Mix celery and prawns with seasoning. Keep into refrigerator before serving.

Pumpkin Chicken Soup 南瓜鸡汤

4人份 Ingredients 用料 600g Pumpkin (remove skin and seeds) 南瓜 1 Carrot 红萝卜 2 Tomato 番茄 20 Red Dates 红枣 1/2 Small Chicken 小菜园鸡 1 tablespoon Sea Salt 海盐 3 litres Water 水 Method 做法 1. Put all ingredients into water. Bring to boil. 2. Reduce to low heat and cook for 4 hours.

Oyster Sauce Enoki Mushroom 耗油金针菇

2人份 Ingredients 用料 2 small packs Enoki Mushroom 金针菇 1 Red Chili 红辣椒 1 Onion (diced) 洋葱 1 tablespoon Oyster Sauce 耗油 100ml Water 水 Method 做法 1. Heat up oil in wok. Fry diced onion in medium heat till turn golden brown. 2. Add Enoki Mushroom and chili to fry. Add water and Oyster sauce for taste. Add a little pepper. Serve.

Thai Steam Fish 泰式蒸鱼

2人份 Ingredients 用料 340g Greasy Grouper 石斑 2 Large Green Lime (juiced) 酸酐汁 1 Large Stalk Fresh Lemongrass 香茅 6 cloves Garlic (minced) 蒜蓉 2 Red Chili 红辣椒 1 Stalk Chinese Parsley 芫荽 5 Stalks Spring Onions (diced) 洋葱碎 1.5 tablespoon Fish Sauce 鱼露 Method 做法 1. Clean fish. 2. Put fish, lime juice, garlic, chili, lemongrass and fish sauce together. Steam for 10minutes. 3. Add Chinese Parsley and Spring Onions prior to serving.

Prawns in Tomato Sauce 番茄酱虾

2人份 Ingredients 用料 8 pieces Medium Prawn 中虾 1 Tomato (sliced) 番茄 1 Egg 鸡蛋 6 cloves Garlic (minced) 蒜蓉 2 tablespoon Tomato Sauce 番茄酱 1 tablespoon Sugar 白糖 150ml Water 水 1 Stalk Spring Onions (diced) 洋葱碎 1 Stalk Chinese Parsley 芫荽 Method 做法 1. Remove shells and veins from prawns, marinate with half tablespoon of salt for 15 minutes. 2. Heat oil in wok. Fry garlic in medium heat till golden brown. Add prawns to fry. When the prawns turn from gray to white/red, they are almost cooked. Add water, tomato, tomato sauce, sugar. When the sauce simmers, add egg and stir well. 3. Add Spring Onions and Chinese Parsley before serving.

Celery Carrot Pork Rib Soup 西芹红萝卜排骨汤

4人份 Ingredients 用料 400g Pork Ribs 猪排骨 2 Old Carrot (skinned and cut into large cubes) 红萝卜 150g Celery (sliced) 西芹 20 Red Dates 红枣 15g Gorgon 芡实 15g Wolfberries 枸纪子 1 tablespoon Sea Salt 海盐 3 litres Water 水 Method 做法 1. Wash the pork ribs. Rinse pork ribs in boiling water. Drain. 2. Put all ingredients into water. Bring to boil. 3. Reduce to low heat and cook for 4 hours.

Korean ChapChae 韩式冬粉 잡채

4人份 Ingredients 用料 250g Korean Vermicelli 韩国冬粉 200g Pork Loin Meat 梅(猪)肉 1 Red Bell Pepper 红灯笼椒 10 Medium Size Fresh Shitake Mushroom 冬菇 1 Large Onion 洋葱 3 cloves Garlic 蒜蓉 4 tablespoon Soy Sauce 酱清 2 tablespoons Sugar 白糖 A little Pepper 胡椒粉 A pinch Sesame 芝麻 Method 做法 1. Cut meat into slices. Marinate meat with soysauce, sugar and a little pepper for 15 minutes. 2. Soak vermicelli in hot water for 15 minutes (till soft). Drain. 3. Heat oil in wok. Fry garlic and onion till brown. Fry meat till cooked. Add in mushroom and bell pepper till cook. Add in vermicelli and semame, stir well. Add pepper to taste.

Stir Fried Prawns with Spring Onions 干煎葱虾

2人份 Ingredients 用料 9 pieces Medium Prawn 中虾 2 Stalks Spring Onions (cut to 1 inch long) 葱 6 cloves Garlic (minced) 蒜蓉 1 tablespoon Sugar 白糖 2 tablespoons Light Soy Sauce 酱清 Method 做法 1. Remove shells and veins from prawns, marinate with half tablespoon of sea salt for 15 minutes. 2. Heat oil in wok. Fry garlic in medium heat till golden brown. Add prawns to fry. When the prawns turn from gray to white/red, they are almost cooked. Add Soy Sauce, Sugar and fry. When the prawns are almost cooked, add spring onions. Serve.

Lemon Roasted Chicken in Turmeric Sauce 柠檬烤鸡

2人份 Ingredients 用料 2 pieces Chicken Drumsticks 鸡腿 1 Lemon (juiced) 柠檬汁 3 tablespoon Fish Sauce 鱼露 1 stick Lemongrass (diced) 香茅 1 tablespoon Turmeric Powder 黄姜粉 1 tablespoon Honey 蜜糖 3 cloves Garlic 蒜头 200ml Coconut Milk 椰浆 Method 做法 1. Add the lemon juice, fish sauce, lemongrass, tumeric powder, honey, garlic and coconut milk in a big bowl and stir till honey dissolves. Put the chicken drumsticks into the bowl and mix well. Put the mixture into the fridge for 2 hours to marinate the chicken. 2. Preheat the over to 200 degrees Celsius. Grease the baking tray. Put chicken onto tray and bake for 25 minutes. Use left over sauce to glaze the chicken during halfway of cooking. 3. Simmer the remaining sauce to boil. Transfer the baked chicken into a serving dish, pour the remaining sauce onto the chicken. Serve.

Korean BBQ Pork 韩式烤肉

2人份 Ingredients 用料 160g Pork Tenderloin (thinly sliced) 梅(猪)肉 4 tablespoon Korean BBQ Sauce 韩国烤肉酱 1 tablespoon Ginger (chopped) 姜蓉 Optional 3 cloves Garlic(sliced) 蒜片 1 stalk Lettuce 生菜 1 stalk Spring onions (diced) 葱碎 Method 做法 1. Cut meat into slices. Marinate meat with Korean BBQ sauce and chopped ginger for 15 minutes. 2. Preheat oven to 220 degree Centigrade. 3. Place the meat on serving plate. Add diced spring onions as garnish before serving. Optional 4. Place meat in lettuce leaf, garnish with garlic and spring onions. Wrap a parcel with the lettuce leaf.

Black Chicken with Dried Scallop Soup 干贝乌鸡汤

4人份 Ingredients 用料 160g Lean Pork Meat 瘦猪肉 1 Black Chicken (deskinned) 乌鸡 2 Dried Scallops 干贝 10 Red Dates 红枣 2 tablespoons Wolfberries 枸纪子 5 slices Ginger 姜片 50g Dried Logan 龙眼肉 3 litres Water 水 A pinch Sea Salt 海盐 Method 做法 1. Boil water. Turn off the heat. Dip chicken into water for 10 minutes. Remove chicken and rinse with water. 2. Put all ingredients into water. Bring to boil. 3. Reduce to low heat and cook for 4 hours. Add sea salt to taste.

Bake Creamy Ham and Mushroom Penne 烤火腿芝士通心粉

4人份 Ingredients 用料 200g Penne 20g Butter 牛油 80g Button Mushroom 蘑菇 2 stalks Spring Onion (diced) 葱 20g Plain Flour 面粉 60g Ham (cut) 火腿 60g Cheddar Cheese 200ml Milk 鲜奶 Method 做法 1. In a large pot of salted water, lightly boil the penne for about 5 minutes until half cooked. 2. Melt a little butter in a large pan. Fry the mushrooms for a couple of mins, then scoop out and set aside. 3. Melt the remaining butter in the pan, then add most of the spring onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste. 4. Heat oven to 200 degree Celsius, then melt a little butter in a large saucepan. Put the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring oni

Japanese Ginger Sliced Pork 日式生姜烧酱猪肉片 (Buta-no-Shogayaki)

2人份 Ingredients 用料 260g Pork Tenderloin (thinly sliced) 梅(猪)肉 6 tablespoon Japanese Seasoning Ginger Sauce 日式生姜烧酱 1 Large White Onion 洋葱 Optional A little Sliced Cabbage 包菜 Method 做法 1. Cut meat into slices. Marinate meat with Japanese Seasoning Ginger Sauce for 15 minutes. 2. Heat up wok. Fry onion till in turn light brown. 3. Add meat to fry. Serve. Optional 4. Serve meat with cabbage salad in thousand island sauce.

Thai Green Curry Chicken 泰式青咖喱鸡

2人份 Ingredients 用料 370g Chicken Thigh (chopped into cubes) 鸡腿肉 70g Green Curry Paste 青咖喱糊 40ml Fresh Coconut Milk 椰浆 6 stalks Long Beans (cut to 1 inch long) 长豆 2 kaffir Lime Leaves 疯柑叶 1 tablespoon Fish Sauce 鱼露 1 tablespoon Sugar 白糖 1 Large Chilli 红辣椒 180ml Water 水 Optional 50g Basil Leaves 紫苏叶 Method 做法 1. Season chicken meat with salt and pepper for 20 minutes. 2. Preheat oven to 200 degree Celcius. Bake chicken for 20 minutes. 3. Heat 1 tablespoon of oil in wok. Add green curry paste. Stir fry until an aroma develops then lower the heat. 4. Add coconut milk and water. Bring to boil. 5. Add long beans and kaffir lime leaves. Add fish sauce and sugar. Simmer until cooked. 6. Garnish chilli and fresh basil. Serve with Thai rice.

Banana Dragon Fruit Yogurt Drink 香蕉龙珠果汁

1人份 Ingredients 用料 1 Banana (chopped into cubes) 香蕉 1/2 Dragon Fruit (chopped into cubes) 龙珠果 5 cubes Ice Cubes 冰块 1 bottle Natural-Flavoured Yakult 原味益多 Method 做法 1. Blend all ingredients in a juicer. Serve.

Thai Pomelo Salad (Yam Som-O) 泰式凉拌柚子虾

2人份 Ingredients 用料 10 Medium Size Shrimps 中虾 1/2 Pomelo (peeled) 柚子 4 tablespoons Deep-fried Diced Onions 炸洋葱碎 2 stalks Coriander 芫荽 2 stalks Spring Onions (cut to 1 inch long) 葱 2 Chilli 辣椒 6 tablespoons Fish Sauce 鱼露 1 tablespoon Sugar 白糖 3 Big Green Lime (squash for juice) 酸酐(浇汁) Method 做法 1. Blanch shrimp in boiling water. Drain. 2. Mix all ingredients in a big bowl, then season with fish sauce, sugar, lime juice. Trasnfer to a serving dish. Serve immediately.

BBQ Sting Ray 烤魟鱼

2人份 Ingredients 用料 1 (approx 200g) Stingray 魟鱼 3 tablespoons Dried Shrimps Belachan Chilli Paste 虾米巴拉煎辣椒酱 10 Shallots (diced) 小葱头 2 stalks Lemongrass 香茅 1 tablespoon Sugar 白糖 1 Large Green Lime 酸酐 Method 做法 1. Heat 3 tablespoons of oil in wok, fry shallots, lemongrass and belachan chilli paste till fragrant and oil appears. 2. Preheat oven to 220 degree Centigrade. 3. Wrap stingray and fried chilli paste with aluminium foil. Bake fish for 30 minutes till cooked. 4. Serve with fresh lime cut into halves. Squeeze fresh lime on fish before eating.

Stir Fried Prawns in Garlic Sprout 蒜苔炒虾仁

2人份 Ingredients 用料 10 pieces Medium Prawn 中虾 1 bunch Garlic Sprout (cut to 1 inch long) 蒜苔 6 cloves Garlic (minced) 蒜蓉 1/2 tablespoon Sugar 白糖 1/2 tablespoon Salt 盐 150 ml Water 水 Method 做法 1. Remove shells and veins from prawns, marinate with half tablespoon of sea salt for 15 minutes. 2. Heat oil in wok. Fry garlic in medium heat till golden brown. Add garlic sprout to fry. Add water to simmer for a minute. Add prawns to fry. When the prawns turn from gray to white/red, they are almost cooked. Add salt, sugar and fry. Serve. Optional Boil the prawn shells in 300ml of water for 10 minutes. Simmer for another 10 minutes. In place of plain water, use this prawn broth to add seafood taste to the gravy.

Stir Fried Pork with Basil Leaves 辣味九层塔炒猪肉

2人份 Ingredients 用料 200g Pork Loin Meat 猪(梅)肉 1 pack Basil Leaves  九层塔 6 cloves Garlic (minced) 蒜蓉 1 Chilli 红辣椒 2 tablespoons Light Soy Sauce 酱清 3 tablespoons Fish Sauce 鱼露 1 tablespoon Chilli Sauce (Optional - Sambal Chilli Sauce) 辣椒酱 1 tablespoon Sugar 白糖 Method 做法 1. Cut pork into slices. Marinate with light soy sauce, fish sauce, chilli sauce and sugar for 15 minutes. 2. Heat oil in wok. Fry garlic in medium heat till golden brown. Add pork to fry. When pork is almost cooked, add chilli, basil leaves to fry. Serve.

Black Fungus Sweet Gourd Soup 黑木耳丝瓜汤

4人份 Ingredients 用料 400g Pork Ribs 猪排骨 1 Sweet Gourd (Deskinned, cut into cubes) 丝瓜 30g Black Fungus (Soaked in water, sliced) 黑木耳 5 slices Ginger 姜片 200g Lean Pork 猪瘦肉 3 tablespoons Light Soy Sauce 酱清 1 tablespoon Sesame Oil 麻油 3 litres Water 水 Method 做法 1. Wash the pork ribs. Rinse pork ribs in boiling water. Drain. 2. Boil pork ribs and black fungus in water. Reduce to low hear and cook for 3 hours. 3. Sliced lean pork and marinate in light soy sauce and sesame oil for 30minutes. 4. Remove pork ribs after 3 hours. Add sliced pork and sweet gourd to boil. Serve.

Grilled Lemon Grass Chicken Wings 香茅烤鸡翅

2人份 Ingredients 用料 10  Chicken Wings (without drumlets) 鸡翅 3 tablespoons Light Soya Sauce 酱清 1 tablespoon Dark Soya Sauce 酱油 6 tablespoons Chinese Rice Wine 花雕酒 2 stalks Lemongrass 香茅 1 tablespoon Sesame Oil 麻油 1 large thumb size  Ginger (sliced) 姜片 Method 做法 1. Rinse chicken wings, drain dry. 2. Season chicken wings with all the ingredients at least 30 minutes (preferably overnight in the refrigerator) 3. Preheat oven to 200 degree Centigrade. Put chicken wings to grill for 10 minutes. Turn chicken wings to grill for another 10 minutes. 4. Add remaining sauce onto chicken and grill for 2 minutes. Serve. Optional: 1. Add 1 tablespoon of chilli sauce to marinate.

Old Ginger Tea 老姜茶

4人份 Ingredients 用料 300g Old Ginger 老姜 1 stick Cinnamon 桂皮 20 Red Dates 红枣 A little Pine nuts 瓜子 A teaspoon per cup Honey 蜂蜜 250ml Water 水 Method 做法 1. Deskin ginger, wash, and cut into big chunks. 2. Put ginger, red dates and cinnamon stick in the water and bring to boil. When the water starts to boil, turn the flame down and simmer for about an hour and a half. 3.Serve with melting a teaspoon of honey into a cup. Add a few pine nuts into the cup.

Stir Fried Chilli Scallop with Asparagus 辣椒带子炒芦笋

2人份 Ingredients 用料 250g Asparagus 芦笋 12 pieces Scallop 带子 1 tablespoon Sambal Chilli Prawn 虾米辣椒 1 tablespoon Light Soy Sauce 酱清 Method 做法 1. Heat oil in wok. Fry asparagus. Add scallop and fry till cook. Add sambal chilli sauce and soy sauce, fry till fragrant. Serve.

Chinese Yam Sweet Corn Soup 淮山玉米汤

Raisin Scones 葡萄干司康

4人份 Ingredients 用料 225g Flour 面粉 50g Butter 牛油 1 Egg Yolk 鸡蛋黄 1 small pot Yogurt 乳酪 1 tablespoon Sugar 白糖 1/2 teaspoon Salt 盐 1 teaspoon Baking Powder 3 tablespoons Raisins 葡萄干 Method 做法 1. Mix the raisins and yogurt. 2. In a seperate flour bowl, mix the flour, baking powder, sugar, and salt. 3. Rub in the butter to the bowl of flour. 4. Mix the ingredients in step 1 into bowl of flour. Knead into a soft dough. 5. Roll out 2cm thick and cut with a round cutter. Brush with the whisked egg yolk. 6. Preheat the oven to 200 degrees Celsius. Bake for 10 to 15 minutes or until golden brown. 7. Serve with butter and jam.

Garlic Butter Scallop 蒜蓉奶油带子

2人份 Ingredients 用料 12 pieces Scallop 带子 10 cloves Garlic (diced) 蒜蓉 1 tablespoon Butter 牛油 1/2 teaspoon Salt 盐 1/2 teaspoon Crushed Black Pepper 黑胡椒粉 1 tablespoon Fresh Lemon Juice 柠檬汁 Method 做法 1. Marinade scallop with salt for 15 minutes. 2. In a heated wok, turn down to medium heat, add butter and garlic. Fry garlic till light brown. 3. Add scallop and fry till cook. 4. Crush black pepper seeds, stir fry well. Add lemon juice last, mix well. Serve.

4人份 Ingredients 用料 225g Flour 面粉 55g Butter 牛油 1 Egg Yolk 鸡蛋黄 1 small pot Yogurt 乳酪 30g Grated Cheddar Cheese 1/2 teaspoon Salt 盐 1 teaspoon Baking Powder Method 做法 1. Mix the flour, baking powder, cheddar cheese, and salt. 2. Rub in the butter. 3. Mix the yogurt into the bowl of flour. Knead into a soft dough. 4. Roll out 2cm thick and cut with a round cutter. Brush with the whisked egg yolk. 5. Preheat the oven to 220 degrees Celsius. Bake for 10 to 15 minutes or until golden brown. 6. Serve with butter and jam.

Prawn Tomato Soup 番茄虾汤

2人份 Ingredients 用料 250g or 12 medium  (Sea - if possible) Prawns 海虾 2 Large Tomatoes 大番茄 1 1/2 cups Water 水 3 slices Ginger 姜片 3 cloves Garlic 蒜蓉 1/2 tablespoon Oil 油 1 stock Corriander Leaves 芫荽 1 stock Spring Onions 葱 A pinch Salt 盐 A little Pepper 胡椒粉 Method 做法 1. De-shell the prawns but keep the tails in tact. 2. Heat oil, fry garlic and ginger. Add prawn shells and fry till frangrant. Add 1 1/2 cups of water and bring to boil. Simmer for 15 minutes and strain. 3. Cut a cross at the bottom of the tomatoes. Put tomatoes into boiling water for 2 minutes. Drain. Remove the skin. Chop the tomatoes. 4. Add prawn stock, tomatoes and deshelled prawns. Cook for 5 minutes. Add salt and pepper to taste. Garnish with corriander leaves and spring onions before serving. Optional 1. Add 1 tablespoon of all-purpose flour to thicken the soup. 2. Add 1 tablespoon of butter. 3. Add 1 diced onion to step 4.

Stew Chicken Wings 卤鸡翅

2人份 Ingredients 用料 300g Chicken (Mid) Wings 鸡(中)翅 1 can Coke 可乐 1 stick Cinnamon 桂皮 3 cloves 八角 1 tablespoon Five Spice Powder 五香粉 1 tablespoon Oil 油 16 cloves Garlic 蒜头 6 tablespoon Soy Sauce 酱清 10g Ginger (de-skinned, slice) 老姜片 Optional 2 stalks Large Red Chilli (remove seeds) 辣椒 Method 做法 1. Heat up oil in wok. Stir fry garlic and ginger. When garlic turn light brown, add chilli (optional), cinnamon stick and 八角. Fry till fragrant. Add chicken wings to fry for approximately 3 minute or till chicken wings turn slight brown. 2. Add coke, water, five spice powder and soy sauce. Close lid to boil. 3. Lower heat to simmer for 2 hours. Serve.

Meat Patties in Red Wine Sauce 장산적

4人份 Ingredients 用料 200g Beef (minced) 牛肉碎 200g Pork (minced) 猪肉碎 100g Beancurd 豆腐 1 large Onion (finely diced) 洋葱 1 tablespoon Sesame Oil 麻油 5 cloves Garlic (diced) 蒜蓉 1/2 teaspoon Sea Salt 海盐 A little Pepper For Sauce 1 1/2 tablespoon Soy Sauce 酱清 1 1/2 Red Wine 红酒 1 teaspoon Brown Sugar 黑糖 1 teaspoon Honey 蜂蜜 2 slices Ginger (finely diced) 姜蓉 1/2 Onion (sliced)洋葱条 Method 做法 1. Mix minced beef, minced pork, beancurd, onion, sesame oil, garlic, salt and pepper in a large bowl. 2. Heat oil in frying pan. Use a spoon to knead the meat into a 3cm diameter patty each. Fry the patty both sides in high heat for a short while. Reduce to medium heat to cook the patty. 3. Place the cook patty on a plate. 4. To prepare the sauce, heat the clean frying pan. Heat oil, fry sliced onions for a short while. Add soy sauce, red wine, brown sugar, honey and ginger. Bring the sauce to boil. 5. Pour sauce on cooked meat patty. Serve.

Blueberry Yogurt Muffins 蓝莓松饼

6 pieces Ingredients 用料 1 cup Plain Flour 面粉 1 1/2 tablespoon Butter (melted) 牛油 1/3 cup Sugar 白糖 1 teaspoon Baking Powder 1/2 teaspoon Baking Soda 1/4 teaspoon Salt 1/2 cup Yogurt 乳酪 1/3 cup Milk 鲜奶 1/3 cup Blueberries 蓝莓 Method 做法 1. Mix flour, sugar, baking poweder, baking soda and salt. 2. Stir in yogurt, milk, melted butter and berries until mixed well. 3. Preheat the oven to 204 degrees Celsius. 4. Fill 2/3 of muffin paper with mixture. Grease top with remaining melted butter. 5. Bake for 15-20 minutes. Serve warm.

Pan Fried Prawns with Cheese Sauce 香煎芝士虾

2人份 Ingredients 用料 10 medium  Prawns 海虾 Stock 1 1/2 cups Water 水 3 slices Ginger 姜片 3 cloves Garlic 蒜蓉 1/2 tablespoon Oil 油 OR 1/2 cup Chicken Stock 鸡汤 Sauce 1/2 tablespoon Oil 油 1/2 cup Fresh Milk 鲜奶 1 tablespoon Butter 牛油 1 teaspoon Corn Flour 玉米粉 2 to 3 slices Cheese 乳酪 A pinch Salt 盐 A little Pepper 胡椒粉 Method 做法 Stock 1. De-shell the prawns but keep the tails in tact. 2. Heat oil, fry garlic and ginger. Add prawn shells and fry till frangrant. Add 1 1/2 cups of water and bring to boil. Simmer for 15 minutes and strain. Optional: You can replace the prawn stock with chicken stock. Sauce 3. Heat oil and pan fry prawns, dish out when cooked. 4. In a clean pan, add butter to melt. Add prawn stock, milk and corn flour mixture, cook till it boils. Place the cheese slices in, cook till they melt. Add salt and pepper to taste. 5. Pour cheese sauce over prawns and serve.

Pineapple Fried Rice 凤梨饭

2 - 3人份 Ingredients 用料 1 1/3 cup Rice 白米 1 tablespoon Raisins 葡萄干 1/2 Pineapple (cut to cubes) 凤梨 5 Mushrooms 蘑菇 2 tablespoons Mixed peas 杂豆 1 Egg 鸡蛋 10 pieces Medium Prawns (remove shells) 中虾 3 cloves Garlic (minced) 蒜蓉 1 Onion (diced) 洋葱 3 tablespoons Chicken stock (or plain water) 鸡汤 (或清水) 3 tablespoons Fish Sauce 鱼露 1 teaspoon Sugar 白糖 2 teaspoons Turmeric Powder 黄姜粉 A little Pork Floss 肉松 Method 做法 1. Cook rice, leave overnight preferably. 2. Heat wok. Add oil to wok. Fry diced onions. When the onion turns slightly brownish, add garlic to fry. 3. Add prawns to fry. When the prawns turn orange (cooked), add mushrooms, mixed peas, pineapples to fry. When the ingredients are cooked, add fish oil, chicken stock and sugar. Add rice and raisins, mix well. 4. Create a centre space in the wok, pour egg (use medium heat). Mix fried rice over eggs. Add turmeric powder and mix well. Serve with pork floss.

Cucumber Appetizer 凉拌小黄瓜

4人份 Ingredients 用料 2 Japanese Cucumber 日本黄瓜 4 cloves Garlic (diced) 蒜蓉 2 Large Red Chilli 红辣椒 4 tablespoons Vinegar (Black) 共研粗 4 tablespoons Light Soya Sauce 酱清 1 tablespoon Sesame Oil 麻油 1 tablespoon Sugar 白糖 Method 做法 1. Cut cucumber into slices. Cut chilli into thin slices (remove core). 2. Add all ingredients and mix well. Keep into refrigerator for 15 minutes before serving.

Japanese Tamago Soft Boiled Eggs 日式卤蛋

2人份 Ingredients 用料 6 medium Eggs 鸡蛋 2 tablespoon Rice Vinegar or Balsamic Vinegar 白醋 2 tablespoons Light Soy Sauce 酱清 1 teaspoon Sugar 白糖 1 tablespoon Seasame Oil 麻油 1/4 cup Water 水 Method 做法 1. Bring water to boil. Add a pinch of salt. 2. Place eggs in a pot of water continue to boil for 5 minutes. Remove the eggs. Place eggs in ice-cold water for 10 minutes. De-shell the eggs. 3. Mix vinegar, light soy sauce, sugar and sesame oil in a pot. Bring to boil. 4. Put the eggs in a container. Pour the sauce over the eggs. Marinate the eggs for 24 hours. Stir the eggs from time to time to have an even marination. 5. Cut eggs into halves. Serve.
