Plum Sauce Chicken Wings 酸梅酱鸡翅

Ingredients 用料


5 piecesChicken Wings 鸡翅
3 to 4 tablespoonPlum Sauce 酸梅酱
2 tablespoonLight Soy Sauce 酱清
2 tablespoonSesame Oil 麻油
20gCoriander 芫荽
20gSpring Onion 葱
4 dovesGarlic 蒜蓉
200mlWater 水


Method 做法
1. Marinate chicken wings in plum sauce and sesame oil (optional: Add a little pepper) for 15 minutes.
2. Heat up wok with 2 tablespoon of oil. Fry garlic till golden brown.
3. Add chicken wings to fry for 2 minutes. Add water and turn down the heat to simmer for 15 minutes. Stir occasionally. Use a fork to poke the chicken. If the fork can easily pierce through the meat the chicken is cooked. Add spring onions and coriander. Stir and serve.

Dry Chilli Squid (Sotong) 宫保苏东

4人份 Ingredients 用料 2 pieces Squid (Sotong) 苏东 1  Onion (chopped) 洋葱 A bunch Dried Chilli 辣椒干 1 tablespoon Dark Soya Sauce 黑酱油 1 tablespoon Sesame Oil 麻油 1 teaspoon Sugar 白糖 1 tablespoon Black Vinegar 黑醋 Method 做法 1. Clean squid. Cut into rings, and marinate with a pinch of salt. 2. Remove dry chilli heads, and cut into 1 inch long. Wash away ask much seeds as possible. 3. In a heated wok, fry dry chilli in medium fire, until nearly dry. 4. Add 2 tablespoons of cooking oil. Continue to fry until fragrant. Add onion and fry until onion turns light brown. 5. In high heat, add squid to wok. Fry quickly till squid curls up. 6. Add dark soya sauce, sugar, vinegar and sesame oil. Fry well. Serve.

Potato, Cheese, Egg Waffle 马铃薯奶酪片

4 pieces Ingredients 用料 1/2 cup Parmesan or Mozzarella Cheese 奶酪 1 Potato 马铃薯 3 Large Eggs 鸡蛋 A pinch Salt 盐 2 tablespoons Cooking Oil 油 Method 做法 1. De-skin the potato, grate into fine stripes. Beat the eggs into the bowl of potatos. Add cheese, salt and mix well. 2. Pre-heat the waffle maker. Glaze the hot plate with cooking oil. 3. Place the mixture into the waffle maker. Press the mixture until crispy brown. Serve. Note:  You will need a waffle maker.

Taiwanese Pork Floss Egg Pancake 台湾肉松蛋饼

  2 人份 Ingredients 用料 2 tablespoons Plain Flour 面粉 1/2 tablespoon Glutinous Flour 糯米粉 1/2 tablespoon Corn Flour 玉米粉 1 Egg 鸡蛋 2 tablespoons Pork Floss 肉松 1 tablespoon Cooking Oil 油 50ml Water 水 3 stalks [Optional] Spring Onion (chopped) 葱花 Method 做法 1. Sieve plain flour, glutinous flour and corn flour into a mixing bowl. Add water, mix well until there are no lumps. Add egg, mix well.  Optional : Add chopped spring onion into mixture, stir well. 2. Slightly heat up oil in flat pan. The pan should not be too hot as the pancake burnt easily. Pour flour mixture enough to cover the base of the flat pan. When the bottom later is almost cooked, add pork floss in a roll on the pancake. Roll the pancake gently with pork floss wrapped inside. Roll over the pancake to ensure all sides are cooked. 3. Remove the pancake and place on a flat plate. Cut into bite size.  Optional: Serve with Taiwanese sweet sauce on top.
