Mix sugar, egg, coconut milk and water in a mixing bowl. Add in self-raising flour, stir the mixture until smooth (no lumps). Add desiccated coconut last, mix well. 2. Heat some oil in wok. Reduce to medium heat. Put 2 spoonful of pancake mixture into wok. Flip over when the bottom layer hardens. 3. Serve with maple syrup, butter or fruits to your liking.
