250ml | Coconut Milk 椰浆 |
100g | Sugar 白糖 |
250g | Flour 面粉 |
50g | Tapioca Starch 茨粉 |
1 teaspoon | Instant Yeast 酵母 |
200ml | Lukewarm Water 温水 |
Method 做法
1. In a small saucepan over medium heat, melt sugar in coconut milk. Stir well to dissolve. Leave mixture to cool at room temperature.
2. In a large mixing bowl, combine flour, tapioca starch and yeast. Make a hole in the middle. Add lukewarm water gently and knead dough well.
3. Add coconut mixture to dough. Use hand to mesh dough lumps until it dissolves in liquid form.
4. Let mixture sit for 90minutes in a warm place until batter rises and many small bubbles appear.
5. Spray egg cups with canola oil (or grease with brush). Pour batter into egg cups. Steam for 15minutes. Serve.
