250g | Salted Vegetables 咸菜 |
1/2 | Duck 鸭 |
3 (large) | Tomato 番茄 |
2 | Salted Plums 酸梅 |
10 slices | Ginger 姜片 |
2 litres | Water 水 |

10 pieces | Shitake Mushroom 冬菇 |
1/2 | Beancurd 豆腐 |
Method 做法
1. Cut duck into big pieces. Blanch in boiling water. Drain water.
2. Soak salted vegetables for 15 minutes. Drain water.
3. Cut tomato into big pieces.
4. Boil all ingredients. Reduce to low hear and cook for 2 hours.
Optional:
5. Soak shitake mushrooms in hot water for 5 minutes, cut away the core.
6. Cut beancurd into small cubes.
7. Before serving, add beancurd and mushrooms into soup. Bring to boil. Serve.
