Grill Ribs 香烤排骨

Ingredients 用料

500gBaby back Pork Ribs 小排骨

Ingredients for Dry Rub 干腌料

1 teaspoonSea Salt 海盐
1 teaspoonFreshly Grounded Black Pepper 黑胡椒粉
1/4 teaspoonWhite Pepper 白胡椒粉
1 tablespoonChilli Powder 辣椒粉
1 teaspoonGround Thyme 百里香粉
1 teaspoonSmoked Paprika
1 teaspoonGround Ginger Powder 生姜粉

Method for Dry Rub 干腌做法
1. In a small bowl, mix all the dry rub ingredients well.
2. Remove the membrane on the underside of the ribs.
3. Season the ribs with the dry rub mixture on both sides. Set aside for at least 30 minutes.


Ingredients for Sauce 酱料

1/4 cup Chinese Rice Wine 米酒
1/4 cupMirin
3 tablespoonsLight Soya Sauce 酱油
1 tablespoonApple Cider Vinegar 苹果醋
2 tablespoonsHoney 蜂蜜
5 slicesGinger (chopped) 姜片
3 clovesGarlic (chopped) 蒜蓉

Method 做法
1. In a pot, mix all the sauce ingredients. Bring to boil. Simmer for 5 minutes for sauce to thicken slightly.
2. Preheat oven to 200 degrees Celsius.
3. Glaze ribs with sauce. Grill in oven for 10 minutes. 
4. Turn the ribs and glaze with sauce. Grill for 10 minutes.
5. Repeat this for an hour or until ribs turned soft and outer skill a little charred. 
6. Boil the remaining sauce. Serve the ribs on a plate and drizzle sauce over ribs.

Taiwanese Pork Floss Egg Pancake 台湾肉松蛋饼

  2 人份 Ingredients 用料 2 tablespoons Plain Flour 面粉 1/2 tablespoon Glutinous Flour 糯米粉 1/2 tablespoon Corn Flour 玉米粉 1 Egg 鸡蛋 2 tablespoons Pork Floss 肉松 1 tablespoon Cooking Oil 油 50ml Water 水 3 stalks [Optional] Spring Onion (chopped) 葱花 Method 做法 1. Sieve plain flour, glutinous flour and corn flour into a mixing bowl. Add water, mix well until there are no lumps. Add egg, mix well.  Optional : Add chopped spring onion into mixture, stir well. 2. Slightly heat up oil in flat pan. The pan should not be too hot as the pancake burnt easily. Pour flour mixture enough to cover the base of the flat pan. When the bottom later is almost cooked, add pork floss in a roll on the pancake. Roll the pancake gently with pork floss wrapped inside. Roll over the pancake to ensure all sides are cooked. 3. Remove the pancake and place on a flat plate. Cut into bite size.  Optional: Serve with Taiwanese sweet sauce on top.

Mee Siam Goreng 炒米暹米粉

3人份 Ingredients 用料 1 packet Vermicelli 米粉 3 Fishcake (sliced) 鱼饼 12 pieces Prawns (de-shelled) 无壳虾 4 pieces Dried Tofu (cut into small cubes) 豆蒲 1 Onion (chopped) 洋葱 6 cloves Garlic (diced) 蒜蓉 2 tablespoons Light Soya Sauce 酱清 1 packet Prima Taste Mee Siam Goreng Paste Methods 1. Soak vermicelli in hot water for 15 minutes, until soft. Drain and set aside 2. Heat oil in frying wok. Fry on onion until light brown. Add garlic and fry until light brown. 3. Add prawns, fishcake, dried tofu and fry until cooked. Add some water (about 1/3 cup) if it is too dry.  4. Add vermicelli to fry. Add Prima Taste Mee Siam Goreng Paste, light soya sauce and fry until fragrant. Serve.
